Nusa Culinary Makes a Flavourful Festival Debut

Kitchen Project graduates Alung and Angga bring Indonesian street food to Auckland 

There’s something special about a first outing. The moment when everything comes together in front of your first festival crowd. For Nusa Culinary, that moment arrived at the Halal Collective Market Day Festival, where they made their debut with confidence, heart, and a menu full of bold Indonesian flavour. Held at Barfoot & Thompson Stadium in Kohimarama, the festival brought together a vibrant mix of food lovers, families, and community. Among the buzz of activity, Nusa shone brightly, not just for their beautifully presented dishes, but for the story behind them.

A Taste of Indonesia, Shared with Aotearoa 

Founded by Kitchen Project graduates Alung and Angga, Nusa Culinary is built on a simple but powerful idea: to bring authentic Indonesian street food to Aotearoa in a way that honours tradition while meeting modern expectations. 

Their festival menu showcased exactly that. Guests were treated to chicken, beef, and tofu satay, served with a rich, deeply flavoured satay sauce, alongside compressed rice and fresh salad. Each dish reflected the care, technique, and cultural integrity that sit at the heart of their brand. But more than just food, Nusa offers an experience. Their cooking tells a story of heritage, home, and the vibrant street food culture of Indonesia. Every bite is designed to transport people, introducing new flavours and celebrating the richness of Indonesian cuisine. 

From Programme to Plate 

Nusa’s journey is also a reflection of what’s possible through The Kitchen Project’s programme. With the right support, mentorship, and access to commercial kitchen facilities, emerging food entrepreneurs are able to take their ideas from concept to customer. For Alung and Angga, this launch marks an exciting milestone. It’s the first of many opportunities to test their offering with real customers, connect with customers, and build momentum for their business. Their vision is ambitious: to become New Zealand’s leading Indonesian food brand, known for authentic flavours, premium quality, and modern service. If their popularity at the festival first appearance is anything to go by, they are well on their way.
