Born and raised in the Philippines, Gaile’s family migrated to New Zealand 17 years ago and have settled into the Kiwi lifestyle. Coming from a family who all love to cook it’s no surprise that Gaile decided to pursue her studies in culinary arts and work as a chef. A few years into her career Gaile was blessed with her first son and as a result put her kitchen aspirations on-hold. Three beautiful boys later Gaile realised running her own business with the flexibility to spend quality time with her family was her real dream, and the idea for She Bakes Dough was born.

Specialising in desserts and pastries along with many classic Filipino sweet treats, She Bakes Dough’s best sellers are Gaile’s amazing cinnamon buns topped with a vanilla bean cream cheese frosting and her traditional dessert made with ube, a Filipino purple yam.  This delicious indulgence is made from a base layer of ube chiffon cake topped with a decadent crème caramel.

Feeling lost and overwhelmed in turning her hobby into her dream job, Gaile’s friend recommended she join the Kitchen Project to help guide her through the unknowns of establishing a business. Gaile says “Applying for The Kitchen Project has been the best decision I have made so far. It has helped me grow and establish my business and be able to do what I love doing.”
